A DELICIOUS Korean Dinner - I heart kimchi!

My cousin Sarah has been in town for the last week, and it's been AWESOME to hang out with her!  I haven't seen her in way too many years, and it's been fantastic catching up and getting to know her all over again. 

Sarah taught English in Korea, so last night she treated our family to Kimchi Jjigae (kimchi stew) with fish & tofu.  I gotta say, it was friggin' scrumptious.  The snow was falling outside, the soup was warm and spicy, and it was absolutely delicious! 

I'm actually eating the leftovers right now.  Jealous?  :) 

That yellow stuff in the glass on the right is corn tea - I've never even heard of it before, but it was actually a really nice & gentle balance to the savory & tangy soup.

I'm actually super happy because Sarah gave me the container of leftover kimchi.  I'd never had the stuff before, but I'd heard of it, and had always been curious.  Now that I've tried it, I'm pretty much in LOVE.  It's really just fermented veggies with spices & seasonings - but it's a great source of fiber, Vitamin A, Vitamin C, and it's low in calories too.  What a winner!  Very simple, yet CRAZY good. 

I'm definitely going to use it for future recipe experiments, so look out!

  1. I am so happy you liked the 김치찌게 (kimchi jjigae) and the 깍두기 (kimchi radishes)! It was awesome spending time with you and your sister as well this week! Please come see me on the east coast!!

  2. I have always wanted to try this out too! I don't think I would make it for myself though...hmm...still have to find a quality restaurant that makes this dish. :) Probably in San Francisco.

    I need to find a good recipe of my own with how to make this - I tried my own version today, and it didn't turn out quite the same (although it's still delicious!) :)
